New Stuff:

We are always trying new stuff, and welcome both your opinions and your suggestions.

The new new stuff is that we have come up with a pretty funky Marmalade recipe using Coffee Cherries and Kaffir Limes.  There are several coffee growers up here on the Tablelands, and we have used the cherries from Jaques Coffee.  In case you didn't know, coffee beans are harvested in these cherries, which are removed in processing.  The downside is that we can only get the cherries at processing time, so availability will be somewhat patchy.  Coffee Cherries are very sweet, and contain a not insignificant amount of caffeine, so this is probably the only marmalade available that will give you an additional wake-up call at breakfast.  You can find a picture of Coffee Cherries, and more information on Tablelands coffee, at www.jaquescoffee.com.

Another product we have in the pipeline is Lemongrass Syrup.  It's very sweet (obviously) with a hint of ginger, and it works well as a sorbet base, a topping, and as a pancake syrup.  This one should be out soon.

We have an essential oil still in operation now, and are producing miniscule quantities of Lemon Myrtle, Mint, Kaffir Lime and Lemongrass essential oils and hydrosols.  We may be making some of these available for web purchasing, but want to get a better idea of life and potency first.  If you are coming past, ask for a sniff!

The old new stuff includes:

·          Bush Mint

·          Fresh Aniseed Myrtle Leaves

·          Green Peppercorn Jam

They are on limited distribution at the moment, but let us know if you would like to see them in the stores we cover in Far North Queensland.

Green Peppercorns are strictly seasonal, and only available for August through October, so the Jam is an attempt to extend availability of a unique flavour.  The result is very interesting IMHO - try some and count to fifteen - the full flavour kicks in at that time.

By the way: here is what our still looks like (when it's clean and shiny).  Made by a nice guy in the US of A, we have modified it by using a commercial steam generator designed for steam rooms - a lot faster than burning propane, and less prone to error.
